This is what our grandparents and great-grandparents did for centuries: wake up early in the morning, take care of housework and start preparing the sauce which was slow cooked. The main meals in Italy consisted of a nice dish of pasta with a good and rich sauce.

The ingredients were sometimes only what was available in the cupboards but combined with expertise by our grandmothers, who handed down from generation to generation the authentic and delicious secrets of simplicity and authenticity. But most of all, the freshness of the ingredients that came from the kitchen gardens.

PGI PACHINO CHERRY TOMATO SAUCE


A perfect balance of basic top quality ingredients. Homemade tomato sauce has a completely different flavor, and to find out you just need to run down to the market and purchase several nice and plump PGI Italian cherry tomatoes. Ripe and fragrant! It requires a few hours of preparation, but the result will be so amazing that you will not regret the work put into it. An equally good alternative, but much simpler, is to try our ready PGI Italian cherry tomato sauce, prepared exactly with the same traditional methods of every Italian family.

AMBERJACK SAUCE


This delicious sauce made with original Sicilian amberjack is prepared with tomato sauce, amberjack, olive oil, capers, chili pepper, parsley, raisins, salt and white wine.
Heat it in a pan, add the pasta and toss for several minutes.

SARDINE SAUCE


This tasty sauce with sardines is a must when you want to try blue fish. A mouth-watering recipe prepared with fresh sardines that are mixed with tomatoes in a unique way: a few raisins, chopped tomatoes, fresh sardines, fennel, olive oil, onion, chili pepper, salt and white wine. Sauté with pasta for several minutes and that’s it!

To fish for grouper the first time is a sort of rite of passage to adulthood for young Sicilians. A classic evergreen of Mediterranean food (in this case, everblack). Simply prepared with fresh cuttlefish and its black ink, expertly combined with tomatoes, onion, chili pepper, parsley, salt and white wine. This sauce is quite suitable for spaghetti and linguine but certainly perfect as a base for a great Venetian-style risotto with cuttlefish black ink.

There are only a few fields where our famous small basil leaves of Prà grow. During the c season, only the top five centimeters of the plant are cut and just five times per year. Afterward, the season stops until the following year. Only extra virgin olive oil from the Ligurian west coast, Parmigiano-Reggiano cheese, Italian red garlic and Italian pine seeds are used. This is a truly unique product that is without competition, even in Italy, with the exception of course of homemade pesto prepared by Genovese grandmothers.
