THE GENUINE ITALIAN DURUM WHEAT PASTA SINCE 1918


In 1918, Benedetto Cavalieri inaugurated his mill and pasta factory with the idea and plan to produce first choice pasta with his ‘fine and selected’ durum wheat from the sunny hills of Apulia. Since the founding, Benedetto Cavalieri has always aimed at innovation and quality, using modern machinery for the kneading, pressing and producing.

To prevent the drying of pasta in the streets, a customary practice at that time, Benedetto introduced a new system which consisted of slow drying pasta in special rooms, equipped with a hot water heater and fan, the same system the factory uses today.

His nephew, Benedetto, the present owner, has been running the company for more than 30 years, following the same rigorous procedures and selections of raw materials that grow in select chosen fields on the hills of Apulia. The durum wheat is cultivated absolutely naturally with attention to quality instead of quantity, and without the use of any chemical fertilizers.

SPAGHETTONI


Spaghettoni is a classical shape of the italian tradition (2,5 mm diameter) and it needs a special blend of semolinas, from durum wheats cultivated in the sunny and windy hills of Southern Italy. The drying process, for about 40 hours at a low temperature, ensures a perfect osmosis between carbohydrate and protein. In this way you can get a balanced cooking from core to surface, a ‹‹delightful chewiness›› and a perfect amalgam with your sauces.

All of the penne shapes are characterized by the oblique “nib” cut and can be used with a multitude of sauce thanks to their hollow form which holds the sauces well. Penne pasta enhances tomato sauces, the aromas of spices, the delicacy of vegetables, and above all, seafood sauces.
